Here is how you make Lisa's Creamy Chicken and Wild Rice Soup (like Panera Bread):

Bring 4 cups of water to a boil in a medium saucepan. Add the wild rice. Reduce to simmer and cook for about 45 minutes covered.While the rice is cooking, saute in a large stock pot or Dutch oven, the diced onions, celery, and carrots with the olive oil and salt on very low heat for about 15 minutes. Add the chicken broth and chicken. Bring to a simmer. When the wild rice is cooked, add the rice to the stock. Add the half and half and bring to a slow simmer again.Meanwhile, melt 4 tablespoons butter in a skillet on very low heat. Add 6 tablespoons of flour and cook until it becomes a paste. Add about 1/2 cup of the stock and mix again until it turns into a paste. Continue adding 1/2 cup of stock 3 or 4 times and returning the roux to a paste. Then add the roux mixture into the soup pot and stir. Simmer for a few minutes to thicken the soup. Serve.
