This recipe is inspired by a Chinese recipe for Savory Chicken. I make it about once a week on average. It is really simple and fast with very few ingredients. I usually serve with rice.A note on this use of habanero; I did not use an exact measure. I estimated. I grew my own peppers this year and earlier this week I harvested the first 4 for a Szechuan Chicken but they were pretty powerful so I kept the julienne sliced peppers in a baggy in the fridge for quick use. I dumped the remnants of the baggy into the pot when I flash fried the scallions. Quarter cup is a rough estimate but it could have been less.Another note about peppers; handle with care. I used vinyl gloves for slicing and still got tingly fingers.80 oz chicken translates to 5 lb.I recommended this as an 8 serving dish. The chicken is cut into quarters to make preparation easier but quarters can be further separated. In my house a breast can feed up to 3 people.The chicken is cooked on the bone with the skin intact too so the broth is rich. It can readily be saved as stock for other dishes.One of my guilty pleasures is ramen. I haven't used seasoning packs in a really long time because I make my own stock, sometimes daily but that is another issue.

The first step calls for a technique called quick frying.Heating oil to a very high temperature and frying the chicken so the external is lightly browned. It's rather nice.I heat the fryer to 275(mine goes no higher)and prep the chicken while it heats.Rinse chicken and cut into quarters.Quick fry each quarter until browned on the outside. Internal temperature doesn't matter because these quarters will simmer for 40 minutes in the pot.Cut scallions into about 2 inch sections down to the bulb but do not include the bulb; put it for something else.Quarter the scallions lengthwise.Habaneros should be halved, thoroughly seeded and julienned as fine as you can manage.In a bowl or cup whisk together soy sauce brown sugar and vinegar. Once the chicken is browned, move on to the next step.Heat the cooking pot over high heat. Add coconut oil; it really can be any oil that suits your taste, I just like the taste of the coconut oil.Once the oil is hot add the scallions and peppers. This step can be easily messed up. The goal is not to saute, the goal is to wake up the flavor of the scallions and peppers.Dump, stir once or twice. Quickly add chicken as evenly as possible. Pour the soy sauce mixture over the chicken. Add 2 cups of water.Heat to boil, lower temp to simmer.Cover and simmer 40 minutes.Serve as you please.
