6-16 oz cans of Bush's medium chili beans
6-14.5 oz cans of Hunts diced tomatoes with basil, garlic and oregano
2 16 oz cans sliced mushrooms
2-11.5 oz cans V8 juice
5 lb. ground beef
2-4" smoked sausage (I like House of Meats Cajun Smoked Sausage)
1/2 large white onion, chopped
2 small green peppers, chopped
1/2 c. raw sugar
1-1.25 oz can chili powder
2 Tbsp. Ricos Nacho Cheddar Cheese Sauce
2 Tbsp. Sour Cream


How Do I Make Slow Simmer Chili?

Here is how you make Slow Simmer Chili:

Brown beef in skillet. Chop onion and peppers. Drain beef. Transfer to a large stockpot (mine holds about 4 gallons). Empty all cans into stock pot, juice and all. Add remaining ingredients, except for the sour cream and cheese sauce. Bring to a boil, stirring occasionally. Turn down flame to simmer on a VERY low fire for 8 -10 hours, stirring at least once every 20 to 30 minutes or so. For best flavor, let sit in refrigerator overnight and reheat the next day.
