2 1/2 tablespoons olive oil

6 cloves garlic, minced or pressed
1 teaspoon salt
1 teaspoon ground black pepper
2 teaspoons Ancho chili powder
1 teaspoon cocoa
2 teaspoons ground cumin
2 teaspoons ground cayenne pepper
1/4 teaspoon cinnamon (I prefer McCormick roasted Saigon)
1 tablespoon honey
3 (12 ounce) cans beans with liquid (I use 1 lt red kidney, 1 dark red kidney, and 1 black)
4 (12 ounce) cans diced tomatoes with juice, whatever seasoned type you prefer
3 bell peppers, red, yellow, and orange, diced small
2 carrots, thinly sliced
1 bunch cilantro, chopped
1 (8 ounce) container dairy sour cream (opt)
Shredded vegan or regular cheese, whatever you like (opt)

Here is how you make TK's Veggie Chili That Even the Meat Lovers Love:

Heat the oil in a large pot over medium heat, and saute seitan, leek, and garlic until leek whites are tender. Add half the bell pepper, saving the other half for garnish. Season with salt, pepper, chili powder, cumin, cayenne pepper, cocoa, and cinnamon. Mix in honey, beans, three cans of the tomatoes, and carrots. Blend the remaining can of tomatoes with half can of water till fairly smooth and add.
