Boil for a couple minutes until alcohol from sherry cooks off.Add scallops and cream - heat as needed to return to serving temperature. The scallops don't need much time to cook - so don't overdo it here.Ladle into bowls, garnish with parsley or green onions if desired. Makes 4 8 oz servings.
