1/2 cup chopped onions

3 medium potatoes
1 can Mexicorn
2 cups milk
4 cups reduced sodium chicken broth
1 cup shredded cheese (optional)

Here is how you make Southwest Chowder:

Cook chicken thighs over medium heat and season with Mrs. Dash fiesta blend, garlic powder, and onion powder to taste. Once chicken is no longer pink, transfer to a plate and allow to cool for a few minutes. Using two forks, shred chicken meat.In a large dutch oven or saucepan, boil potatoes in chicken broth, covered, until fork tender. Lower heat to medium. Mash gently into smaller pieces. Add Mexicorn, spinach, milk,onions, green chili peppers, and cooking cream. Mix well until cream is completely blended. Stir in chicken, bring to a boil, then simmer 5 minutes.
