1. In a medium-sized saucepan, over medium heat, mix the ricotta with a little water to thin it out.2. Whisk egg in a small bowl, and add to ricotta mixture (this step is important-- you don't want a lot of stringy egg white in your cereal). Continue stirring.3. Add the pumpkin and salt.4. Sweeten to taste with stevia and add cinnamon, nutmeg, or whatever you like.5. Continue to stir for 2 or 3 minutes. When it goes "grainy", that's the egg cooking. 6.
