1 c mixed greens salad
1 c chopped cucumber
1 c chopped tomatoes (or 1 cup cherry tomatoes)
10 baby carrots
1 apple (2.5-inch diameter), cut into pieces (with skin)
1 c canteloupe, cut into pieces
1/4 c apple juice or apple cider


How Do I Make Cathy's Fruit and Vegetable Salad?

Here is how you make Cathy's Fruit and Vegetable Salad:

Chop cucumber, tomatoes (if not using cherry tomatoes), apple and canteloupe into small pieces. Put into bowl with lid.Add the mixed greens, baby carrots and the apple juice. Shake ingredients together to mix them up. If not eating right away, put into refrigerator and put the apple juice into another container. Add apple juice about 15-20 minutes before serving.
