Here is how you make Fresh Mint Watermelon Salad:

Place red onion in bowl and pour lime juice over it. Let stand 20 minutes. Meanwhile cut watermelon and place in large bowl. Add chopped mint and parsley. Add the onion and lime juice. Mix well and refrigerate for about 60 minutes if you have the time. Just before serving add the olives and feta. Stir and serve. Serving Size:?Serves 8
