8 oz uncooked pasta (recommended noodle is a macaroni noodle)
2 cans diced tomatoes
2 cans red kidney beans
12 cups beef broth
20 (appx) medium sized baby carrots diced
1/2 onion chopped/diced
2-3 zucchinis, thick sliced and then quartered
5-6 celery stalks thinly sliced
1/2 cup frozen peas
1/2 cup frozen corn
1 bell pepper diced (color of your choosing)
2 large handfuls of green beans chopped into smaller pieces, ok to use frozen but fresh is always better
1-2 Tbsp of dried basil (fresh is better)
1 Tbsp or dried oregano
1/4 cup minced garlic (keep in mind this is a large recipe)
1 cup Ragu Traditional Spaghetti Sauce

Here is how you make Vegetable Minestrone:

The cook time on this could be longer if you are cooking at a very low heat and adding meat. The longer the soup cooks, the better the meat tastes and the soup for that matter.Basically start by using a very large stock pot. Pour broth in first then just start adding ingredient after ingredient (even adding the meat if you are using it, simply brown whatever meat you are using first, it will cook completely in the pot). However do not add the pasta or the zucchini (or the potatoes).Let it simmer for about 45 minutes on medium and then add the pasta and zucchini for the last 15 minutes. Turn the pot off immediately after so the pasta won't soften too much and make the soup mushy (this is a good rule of thumb for the potatoes as well). If you are like me and like to simmer for a long time, leave it on a very very low heat and you can wait until you are about 20 minutes from serving and add the last minute items after turning off the flame. The heat alone will cook them.Makes about 14, 1 1/2 to 2 cup servings.
