What Are The Ingredients For Beef with Fried Noodles Recipe?The ingredients for Beef with Fried Noodles are: 3/4 pound boneless Lean Beef Steak1/2 pound dried Chinese Plain Noodles 3 quarts boiling Water 1/2 teaspoon Salt 8 to 9 tablespoons plus 2 teaspoons Light Olive Oil 3 tablespoons Soy Sauce 1 1/2 tablespoons Rice Wine (can sub Dry Sherry) 1 1/2 teaspoons Sugar 1/2 teaspoon Garlic, minced 2 tablespoons plus 2 teaspoons Cornstarch 3 tablespoons Cold Water 2 cups Chicken Stock or Broth 3 ounces French Green Beans (can sub Snow Peas) 1 cup Baby Portabella Mushrooms, sliced 1 can Baby Corn, rinsed & drained 2 tablespoons Green Onion, minced, white part only 2 teaspoons Pared Fresh Ginger Root, minced How Do I Make Beef with Fried Noodles?Here is how you make Beef with Fried Noodles: 1. Slice sirloin into thin slices 1/8 inch, cross grain (note- freezing 30 minutes will help with the slicing process). Stack slices, cut into 1-1 1/2 inch pieces. In medium bowl, combine 1 tbsp soy sauce, 1/2 tbsp rice wine, 1 tsp sugar and the garlic- mix well. Add beef- mixing to coat all pieces. Stir in 2 tsp cornstarch, mix well. Stir in 2 tsp oil. Marinate at room temperature 30 minutes. 2. Cook noodles in boiling water until firm-tender, 3-6 minutes after water returns to boil. Drain noodles and rinse under cold running water. Drain well. Sprinkle with salt and drizzle with 1 tbsp oil. Mix with hands to coat noodles; set aside uncovered, at room temperature.3. Mix 2 tbsp cornstarch and the cold water until smooth. Stir in stock, 2 tbsp soy sauce, 1 tbsp rice wine and 1/2 tsp sugar. 4. Heat wok over high heat 15 seconds; add 3 tbsp oil and heat until hot (about 30 seconds). Add 1/4 of noodles at a time to wok, shaping into flat nests. Once all noodles are added, press with spatula to flatten. Reduce heat to medium-low and fry without stirring until brown and crisp- 4-6 minutes per side. Add 1 tbsp oil around edge of noodles if needed. Transfer to a serving platter; keep warm in 200 degree F oven.5. Add 1 tbsp oil to wok and heat over high heat until hot. Add green beans, stir fry 15-20 seconds then remove to plate. Add mushrooms and corn, stir fry 45-50 seconds. Add onion and ginger; stir fry 10 seconds. Stir cornstarch mixture and add to wok; heat to boiling. Return beef and green beans to wok. Cook and stir until sauce is thickened, about 1 minute. Pour beef mixture over noodles.
