Here is how you make Easy Stir Fry:

In a sauce pan, bring the water to a boil. Add rice and stir. Cover, and turn off that burner, but leave the pan on the warm burner.While the rice is steaming, saute the chicken with olive oil in a large skillet over a medium/medium-hot heat. When the chicken is no longer pink, Add the veggies, and more oil if needed. Stir well to coat the veggies in oil. Cover the pan, and let simmer on a medium-low heat, stirring occasionally until the veggies are as soft as you like them.Serve the chicken and veggies over rice.
