This recipe is delicious ! & modified from The 1500-Calorie-A-Day Cookbook by Nancy Hughes published by McGraw-Hill 2009, page 142, Fresh Ginger-Pork Potsticker Bowls. We doubled the pork in the recipe, increased the wontons, grated the carrot (instead of chopping matchsticks), & used ground ginger instead of fresh grated. (We left out dried pepper flakes which were optional.) We used 'full' sodium chicken broth then diluted it with water, then used less soy sauce & green onion for a lighter broth altogether.

40 wonton wrappers
32 oz chicken broth
26 oz water
2 tsp light soy sauce
3 small green onions (1/2 c. chopped)

Here is how you make Ginger Pork Potsticker Bowls:

Combo pork, carrots, & ginger in small bowl; blend thoroughly. Fill wonton wrappers according to package directions (This takes time & practice)Add water to pot/Dutch oven & put a steamer basket inside. Arrange wontons in single layer - do not stack them. Bring water to boil & steam wontons 13 minutes.Remove basket with wontons from pot, discard water, put broth in pot and bring broth to boil. Then add wontons. (wontons may stick together, just submerge basket in broth & wontons should release.)Return to boil & then immediately remove from heat. Remove wontons from broth with sollted spoon. Place 8 wontons in shallow bowl. Add soy sauce to broth & spoon about 3/4 c broth over each serving, sprinkle with green onion pieces.
