Here is how you make Vietnamese Caramelized Grilled Pork:

Pound chops to 1/4 to 1/8 inch thin with meat pounder, cut the chops in half lengthwise and put into a bowl. Cook sugar in a dry small saucepan over medium heat until it begins to melt, then stir until a silky caramel. Add shallots, lime juice, fish sauce (vinegar) and salt. The caramel will harden, but continue to stir until caramel is dissolved and shallots are softened. Pour sauce over pork and toss until coated well. Heat a lightly oiled heavy sautee pan over medium high heat until hot but bot smoking. Grill the pork in batches, turning over once, until just cooked through.
