2 tsp peeled finely chopped gingerroot
2cloves garlic, pressed
1/4tsp red pepper flakes
1lb boneless pork loin
2c uncooked whole grain brown rice
1 medium red bell pepper
1 cup snap green beans (fresh)
onion to taste
1 can bamboo shoots
1 cup bok choy

Here is how you make Teriyaki Pork Stir-Fry:

In small bowl combine soy sauce and brown sugarwhisk until blended, add finely chopped gingerroot, red pepper flakes, and pressed garlic . Cut pork loin into 1/8in strips and add to soy mixture, toss to coat, marinate for 15 min in fridge.Meanwhile, cook rice per pkg instructions. Cut bell pepper into 1/4 in strips, chop bok choy into smaller pieces.Heat 1/2 tsp of oil in skillet, removed pork from marinade, add to skillet, reserving marinade, fry 1-2 min or until pork no longer pink, remove from skillet and keep warmuse remaining 1/2 tsp oil in same skillet, add bell pepper, green beans, onion, bok choy and bamboo shoots, Stir-fry 2-3 min until veggies are crisp-tender, readd pork and remaining marinade, Cook and stir 1 min or until heated through.Serve on top of rice.
