Here is how you make Deb's Wacky Wasabi Cucumber Salad:

If you're going to peel your cucumbers do that first and then dice them up, measure out 4 cups worth and toss into a large enough mixing bowl.In a separate and much smaller microwave safe bowl put one Tbsp of the Low Sodium Soy Sauce and heat on high for about 10 to 15 seconds (just long enough to get it hot). Mix the tsp of wasabi into the hot Tbsp of soy sauce. The heat seems to help the wasabi mix into the soy sauce much easier and faster. It's a step that you can skip if you like. I just like everything well blended. Now add the additional two tablespoons of soy sauce to the soy sauce wasabi concoction that you just mixed up and blend well. Pour this mixture all over the diced cucumber and mix it in well. Enjoy!Serving Size:?Makes 4 -1 Cup servings
