8-12 oz. Marinated Tempeh - Feel free to make your own marinade. (See instructions)
1 Onion, sliced
1 Bell Pepper, sliced
1 Can Water Chestnuts (optional)
1 Package of Udon Noodles (omit soup flavoring)
1/2 Lime, juiced
2 Cups Vegetable Stock (low sodium)
1 Tbsp Soy Sauce (low sodium)
1 Tbsp Sambal Oelek (optional)
1/4 Cup Unsalted Sliced Almonds (May substitute peanuts or cashews.)


How Do I Make Asian Inspired Tempeh Stir Fry?

Here is how you make Asian Inspired Tempeh Stir Fry:

Heat sesame oil in a wok on medium heat with ginger, garlic and jalapeno. When garlic begins to brown, add tempeh, onion and pepper. Cook for about 5 min. until onions begin to soften, but are still crunchy. In the meantime mix together liquid ingredients - vegetable stock, lime juice and Sambal Oelek if you haven't done so already. (You may substitute your marinade for these liquid ingredients if you marinade your own tempeh.) Add Udon Noodles to the wok and discard flavor package. Try to position the noodles near the bottom, and pour liquid into the wok. Cook until no liquid remains ~ 5-10 min. Toss in sliced almonds (peanuts or cashews are good as well), and serve.
