Heat oil in large skillet over med-high heat. Cook and stir the bell peppers in oil until slightly tender (5-7 minutes). Remove pepper and set aside. Add chicken to the skillet, season with jerk - cook and stir chicken until no longer pink. Pour in plum sauce, add the bell pepper toss to combine. Cook until everything heated.
