Here is how you make Thai Mango Stir-Fry:

1. Prepare the vegetables first. Slice the peppers lengthwise. Snip the ends off of the snap peas. Peel and chop the mango into inch-sized cubes. Peel the carrot and use the peeler to slice it into long strips.2. With the sesame oil in a wok (or frying pan), fry the carrots on medium-high heat until they are just turning tender. Add in the mango and continue to fry until it is softened (about five minutes).3. Add in the remainging vegetables and the thai sauce and fry briefly, about 5 minutes, until the vegetables are all the desired consistency.4.
