-Cook the rice according to the package, or: -rinse 1 c rice in sauce pan until water runs clear. -cover rice and let sit 10-15 min until plump (Or you cancook right away)-place 1.3-1.5 c water in sauce pan over drained rice and heat over medium heat until boiling. Shake pan to move grains around and break up clumps. -cover and lower heat to low for 15-20 min.-once the water is visibly gone, increase the heat for 1 minute on high, then shut off and remove pot (DO NOT REMOVE LID). Let sit 10-15 minutes-it is steaming the rice and continuing absorption so DO NOT remove lid until you are sure its done cooking.In the meantime mix mayo and tuna to your desired taste. -wet hands under cold running water and salt your hands.-take a portion of rice and make a ball (usually 1/4-1/2 cup cooked rice for each onigiri)-then make a hole in the center and fill with your fillings.-Cover with another small portion of rice and begin compacting and shaping the ball, compressing the rice tightly. I make round or triangle onigiri.-place first onigiri on a plate and continue making onigiri until none left.1 cup uncooked rice makes 4 small onigiri or 3 medium onigiri.sprinkle with sesame seeds, or bonito flakes.
