8 Hamburger buns (before SP, I used giant bakery Kaiser rolls or onion rolls - which are better, so if you want to use your calories on those, I recommend it.)
PAM spray (for browning buns) - you can leave out and just put them in the toaster if you want.

For the Patties:
1.5 lbs ground turkey (original recipe used ground chicken)
2 Tbsp sesame oil
2 Tbsp soy sauce (low sodium)
1 Tbsp (ish) brown sugar (not packed) add about 1 tsp more if using light brown, as it's the molasses taste we're looking for)
4 scallions very finely chopped

For the Sauce:
1 Tbsp light mayo
1 tsp Srirachi chili sauce
1/2 oz. lime juice (or the juice of 1 lime)

Here is how you make Chinese Turkey Burgers:

Mix all ingredients for patties in a large bowl and refrigerate for 30 minutes.Remove from fridge and divide mixture into 9 servings. (Yes, there will be 1 left over since buns only come in 8's - I usually eat it for lunch, crumbled over some lettuce in a salad.)If you use ground chicken, it can be hard to make actual "patties" from this mix, as it's a bit loose - ground turkey holds together better. Normally I take a scoop with my wooden spoon, and drop it into my hot pan and press it down until it resembles a patty. Cook until it starts to firm up, then flip and baste with hoisin sauce. (If hoisin is a little too much for you, a thick teriyaki sauce/marinade works just as well)Repeat with all patties. Then remove to a plate and set aside.Spray a bit of PAM in a pan and grill or toast buns - cover and set aside.Mix ingredients for sauce in a small bowl.
