In another pan saute rice 2-3 minutes on Med-High til lightly browned. In another pot add sausage and saute lightly with pam, add in veggies after 2 minutes, add oregano, cajun seasoning, chili, cayenne, and 2 bayleaves if desired. Stir together for 2 minutes and add tomatoes, stir another minute and add chicken broth. Turn burner to high, when mixture boiils add browned rice. When mixture boils again cover and turn burner to low for 35 minutes.
