This is a recipe I modified from an eatingwell.com recipe called Mini Mushroom & Sausage Quiches. I make them in bulk then wrap them individually and store then in the freezer for up to a month. Great quick breakfast item.

8 oz mushrooms sliced
1/4 cup colby shredded cheese
5 eggs
3 egg whites
1/4 cup sliced japalenos (optional)
Lg Red Bell Pepper diced
3/4 cup 1% Milk



How Do I Make Mini Quiche?

Here is how you make Mini Quiche:

Brown sausage, meanwhile prepare vegetables and set aside. In a seperate bowl combine eggs and whisk together adding the milk. Once the sausage is done add it to the vegetables along with the cheese. Spray a 12 cup muffin tin with cooking spray and evenly divide egg mixture, then add the vegetable/sausage mixture to the cups. Each quiche should be packed full of veggies.
