In a food processor, combine garlic, rosemary, thyme, mustard, soy sauce, and pepper to make a paste. Completely cover lamb roast with paste. Cover and marinate in refrigerator for at least 1 hour (or overnight).Preheat oven to 325 degrees F. Place roast, fat side up, in roasting pan. Roast for approximately 25-30 minutes, or until internal temperature reads 140 degrees (medium rare).
