2 Tbs. ground flaxseed
1-1/4 tsp. baking soda

3/4 cup unsweetened vanilla almond milk
1/4 cup honey or agave nectar
2 ripe medium bananas, mashed
1 egg
2 Tbs. olive oil
1 tsp. vanilla
1 cup fresh or frozen blueberries

Here is how you make Banana Berry Muffins:

Preheat oven to 400 degrees. In a medium bowl, combine the wheat bran, whole wheat flour, flaxseed, baking soda, cinnamon and salt; set aside. In another bowl, combine almond milk, honey, bananas, egg, oil and vanilla until smooth. Make a well in the center of the dry ingredients and pour in liquid ingredients. Stir just until combined. Add the blueberries, stir again, but do not overmix. Spoon batter into 12-cup muffin tin sprayed with nonstick cooking spray. Bake 14 minutes, or until tops spring back when pressed gently in the centers. Do not overbake. Cook in pan 10 minutes, then cool completely on wire rack.
