preheat oven to 350. Grease muffin pan (dont line w/ paper liners--the muffins will not release from the paper due to the low fat content...I learned the hard way)In a medium bowl, combine the flour, baking powder, baking soda, and salt *sift the ingredients together for a lighter consistencyIn a separate bowl, combined the mashed bananas, sugar, egg, vanilla, coconut, and apple sauce and mix well. Then gently fold the blueberries into the wet mixtureCarefully fold the ingredients together so as not to crush the blueberries.Scoop batter in prepared muffin pan and bake for 15-20 minutes or until a tooth pick is inserted in the middle and comes out clean!Cool, serve, and enjoy!Makes 12 servings (very easy to do double batches....great breakfast on the go!)Number of Servings: 12Recipe submitted by SparkPeople user DEEDS1313.
