This is a healthy, high protein, low calorie moist muffin. This was adapted from DUCATI77's Protein Whole Wheat Blueberry Muffins. This turned out to be moist but a bit lower in sugar for my taste. Also, hubby thought it needed more banana flavor. Next time, I would up the brown sugar to 1/2 cup packed and add 1 more mashed banana and possibly 1 tbsp olive oil to make more moist. Overall a decent healthy snack or breakfast on the run.

2 scoops Proventive Harmonized vanilla protein
1 tsp baking soda
1 cup old fashioned oats, ground
1/4 cup brown sugar, packed
1/4 cup splenda
1/2 tsp salt
1.5 tsp cinnamon
2 medium bananas, mashed
2 egg whites
1/2 cup water
1 1/2 cup fresh blueberries

7 walnuts, chopped
1 tsp water

Preheat 350FPrepare a muffin tin - spray with non-stick spray then dust with AP flour.Mix all dry ingredients with a wisk in a medium bowl until well blended.Mix all wet ingredients together.Mix dry ingredients into wet ingredients until just blended. Do not over mix.Fold in blueberries then pour into muffin tins.In a small bowl, mix brown sugar, walnuts and water.
