Preheat oven to 350, mash bananas. Spray pans will cooking spray.In a mixing bowl mix all the WET ingredients plus the sugar.In a seperate bowl mix all the remaining dry ingredients. Add to the wet bowl and mix well.Pour about 1/2 full in each mini loaf pan. Should make 7 mini loaves depending on how much you fill each one. DO NOT make in big loaves doesn't seem to cook through well.
