How Do I Make High Protein Breakfast Bake?

Here is how you make High Protein Breakfast Bake:

Saute the onions and peppers in 1t olive oil until onions are translucent. Remove from pan, add 1t olive oil and brown simple potatoes and brown. Layer the potatoes, onions and peppers, chicken. Then poor the enchilada sauce over top and crack the eggs in 8 little nests.
