3. 1 cup shredded Mexican blend cheese (can use low fat cheese)
4. ½ chopped onion, sauté
5. 1 T. milk
6. 1/2 cup canned chopped green chiles
7. 2 cups hash browns
8. Fresh ground pepper, cayenne

Here is how you make Southwest Breakfast Bake:

Sauté onions in a large skillet sprayed with Pam.Set aside. Sauté sausage.Drain on paper towel. Separate eggs, using only 2 egg yolks for this dish. Beat eggs.Add cheese, pepper, cayenne and chiles. Spray 9 X 9 baking dish.Line baking dish with hash browns and microwave 2 minutes while you cook sausage. Put onions over potatoes, crumble sausage over that, then pour egg mixture over the hash browns, onions, and sausage. Bake aat 375 degrees F. for 35 to 40 minutes or until egg mixture is firm. Serve hot.Can be served with salsa and/or extra cheese.Makes 6 generous servings in about a 3 X 4 1/2" rectangle.NOTE: The calorie and fat count will be less because I couldn't find Jimmy Dean low-fat sausage on our food calculator.
