2 cups Weight Watchers Shredded Mexican Four Cheese Blend, or other 2% shredded cheese
Salt and pepper to taste

Here is how you make Cheesy Broccoli Breakfast Scramble:

Prep:*Dice one large or two small-to-medium potatoes for about 3 cups total potato. *Separate 1 dozen eggs. Beat egg whites with fork till well mixed.*Preheat oven to 350 degrees.Cooking:*Boil potatoes until tender, 10-15 minutes depending on size. Add salt to water, if desired.*Brown sausage.*Scramble eggs. Add salt and pepper to taste.Assembly:*Spray a 9x13 casserole dish with non-fat cooking spray or line with parchment paper. Add eggs, sausage, potatoes, and broccoli and stir all ingredients together. Top with cheese (more or less to taste). Bake at 350 for about 15 minutes or until cheese is melted.*Cut into 8 equal portions. This freezes well.
