Here is how you make Gimme Lean Sauage breakfast burritos:

crumble and cook Gimme Lean in the olive oil over medium heat. Once it "looks right" (remember I've never cooked with this stuff) It was very sticky when I took it out of the package, the longer it cooked the more it resembled sausage in looks and texture. I also ended up adding a tbs or two of water as it started to stick. Turn the heat to low. Whisk eggs and add to sausage. I covered mine, cooked for 3 minutes, stirred. covered and cooked for roughly 4-5 minutes. I came back to the stove and the lid was raised off the pan. There was still a little wet but once I stirred it, it came together very well. Remove to a bowl and cover. Spray your pan with cooking spray and add onion and bell pepper. saute until crisp tender. Mix with egg mixture. Place 1/2 cup mixture and 1Tbs cheese on shell and roll up. Continue with the remaining shells and mix. I ended up with 13 burritos and about 1/4 cup mix left.Serving Size: Makes 13 burritos (almost 7 cups) Number of Servings: 13Recipe submitted by SparkPeople user KRYSD26.
