Pre-heat oven to 375 degrees.Spray a personal sized oven safe dish with PAM. Line the dish with 1/2 of a sheet of phyllo pastry. Chop the rest of the sheet into tiny pieces and toss the pieces with the sugar and cinnamon until well mixed.Toss together the spinach, onion, and cheese. Place mixture into the phyllo lined dish.
