I use Morningstar Bacon which still gives it a crunchy, bacony flavor, egg beaters, and light english muffin. Place a small skillet over med-low heat and spray with Pam. Place the english muffin halves in a toaster and begin toasting. Put the bacon strip on a microwave safe plate and microwave for 30-40 seconds (higher power microwaves require less time...I burnt the first two slices I tried :) ). Pour 1/4 cup of egg beaters in the skillet and cook until done. When the english muffins are done, spray both halves of the english muffin with Pam. Add the bacon, cheese, and egg beaters, and your ready to eat.Serve with a Slim Fast (or similar) shake for a filling, and totally healthy, 400 calorie breakfast. Bon Appetite!.
