- In a medium sized bowl, beat egg whites and egg- Continue beating, add milk, parmesan cheese, salt and pepper- Continue beating, add chopped spinach- Heat a small, round egg pan, once hot, reduce to medium heat- Spray once with Pam- Spoon in 1/5 of the mixture- cook on one side til lightly brown then flip and cook on other side until the same- Repeat for rest of the mixture- Wrap and refrigerate for use; also freezes okay- Makes 5 servings- Top with cheese, lettuce, tomato, serve on a whole grain english muffin or half a bagel.
