1/2 cup quinoa, dry (I used Bob's Red Mill)
1 cup water
1/4 cup zucchini, chopped
1/4 cup yellow squash, chopped
1 small plum tomato, chopped
1/4 cup cooked chopped spinach, patted dry (I used frozen)
3 tablespoons olive oil
2 large fresh eggs
1/4 cup shredded mozzarella cheese
salt to taste (I prefer kosher)
parmesan cheese to taste (optional)


How Do I Make Savory Quinoa Breakfast with Egg?

Here is how you make Savory Quinoa Breakfast with Egg:

1. Rinse the quinoa and place in a small saucepan with 1 cup water (1:2 ratio of quinoa to water). Bring to a boil, then reduce the heat to simmer, cover, and let cook for 10-15 minutes, stirring occasionally.2. While the quinoa is cooking, wash and chop your vegetables if you haven't already. Heat up a little olive oil in a small frying pan and add the vegetables. Saute for a few minutes, until the squash is cooked through (this will depend on how small you chopped it up) but not mushy. 3. When the veggies and quinoa are cooked, transfer them to a medium sized mixing bowl. Mix them together. Split the mixture in half and divide it between two plates. Top each with a small handful of mozzarella cheese.4. Return the frying pan to the stove. Reduce the heat to medium low, add more olive oil and crack one egg into the pan. Fry until the whites are set but the yolks are still runny. Slide cooked egg on top of the quinoa/vegetable mixture. Repeat with second egg. 5.
