Mix the chopped parsley and cilantro into the beaten aggs. Add the potatoes and a little salt and pepper. Cover and cook for about 4-5 minutes on medium. Add in the onion and tomato, cook for another minute or so, then add the beaten egg mixture. Cover and continue to cook around medium heat. After the first mixture in from the edges of the pan and swirl the pan gently to move the raw egg to the edges. Sprinkle on the cheese. Cover and keep cooking.
