Here is how you make Farmer's Breakfast Frittata:

Using a pan with a tight fitting lid, start the bacon and ham on medium heat to start rendering a little fat. Mix the chopped parsley and cilantro into the beaten aggs. Add the potatoes and a little salt and pepper. Cover and cook for about 4-5 minutes on medium. Add in the onion and tomato, cook for another minute or so, then add the beaten egg mixture. Cover and continue to cook around medium heat. After the first mixture in from the edges of the pan and swirl the pan gently to move the raw egg to the edges. Sprinkle on the cheese. Cover and keep cooking. Using a lid with a good fit will make the eggs puff up a bit, making the frittata light and fluffy.Serving Size:?Makes 3 servings (1/3 of a 12" dia frying pan)
