Here is how you make Breakfast Hash:

Mince Garlic.Dice potato.Put celery through food chopper.Put onion through food chopper.Heat pan. (I use a cast iron, and preheat it for 10 minutes in the oven before moving it to the stovetop, it ensures a more even and thorough heat.)While pan is heating, mix eggs and spices in a bowl, make sure none of the spices are clumped together.Add butter and Garlic to the hot pan, and stir until it's all a bit foamy looking, and garlic softens. Add onions and stir and let cook for a minute, before mixing in the celery. Let cook another minute before adding in the potato, stir well and let cook for one to two minutes.Add cheese to egg and mix thoroughly. Pour eggs over the potato mixture in the pan. Stir it all together and let it cook, stirring and turning every couple of minutes until the egg is thoroughly cooked.Once the eggs are cooked, you can dish it up, or if you're like me and prefer them more well done, smash everything flat and let it cook for a couple more minutes, turn it all over and smash it flat again and cook a couple more minutes.Serving Size: 2 small servings, or 1 largeNumber of Servings: 2Recipe submitted by SparkPeople user KADANA.
