Here is how you make Loaded Cheesy Breakfast Potatoes:

In a large bowl, toss in cubed potatoes, diced onion, olive oil, salt and black pepper. In a small pot combine 1/2C sour cream, 1/2c cream cheese, tsp olive oil & a slice of cheddar cheese (gives it color and a little more flavor). In skillet heat potato mixture to med-high then set aside. In small pot with cheese mixture, heat until slightly boiling/bubbling.In a dish or bowl, layer potatoes then cheese mixture, then potatoes.
