16 large eggs
1 pkg frozen chopped broccoli, thawed and squeezed dry
1 small zucchini, grated and squeezed dry
1 red pepper, chopped
1 medium onion, chopped
Handful of mushrooms, chopped
1/3 c. grated cheese
Yochee (used 16 oz cottage cheese, rinsed)
salt & pepper

Here is how you make Quiche Breakfast bars:

1.Saute the mushroom and onions until soft, allow to cool slightly. Dump everything into a bowl and mix it up. Pour into greased 9 x 13 pan. Bake uncovered at 375 degrees for 40-45 minutes. Allow to cool slightly and then cut into 12 pieces. Allow the pieces to cool completely. Arrange the pieces slightly apart on a rack and put in the freezer until frozen solid. Put the pieces into a ziplock bag. Put back in freezer. Microwave for a couple of minutes when you are ready for a quick breakfast! I cut the recipe in half and added extra veggies.
