*Feta Sausage from Sunflower/Sprouts Market1. Heat 2tbsp oil in large pan. Measure desired amount of hash browns, in this case 4 cups. Let sit 3-4 minutes before turning.2. While hash browns and cooking, chop green onions and yellow onion.3. In second pan heat oil or cooking spray and add sausage. Turn sausage as needed to brown all sides and cook all the way through. Add onions when sausage is about half way done.4. Keep eye on hash browns. Want golden brown color, break up and turn over as needed. Cover when finished cooking.5. When sausage is browned on all sides, remove from pan and place on plate or cutting board. Leave onion in pan if using it for eggs or transfer to bowl. Use tongs and knife to slice sausage. I did one cut down the middle length-wise and then cut into roughly quarter inch slices.6. Add cooking spray to pan for eggs and turn stove to medium heat. Crack eggs into large bowl and mix, add milk. When mixed, pour into pan. Add onions if needed. After about a minute, add sausage. Cook eggs to desired fluffiness. Turn off heat.7. Lay paper towel down on counter and place 3 tortillas down (or what you have space for). Spoon a little of egg/sausage mix onto tortilla, near one edge for easy rolling. Add a little bit of hash browns on top. Repeat for as many tortillas as you can fill. Place finished burritos onto baking tray or glass dish. Either grease tray first or lay down wax paper before adding burritos. 8. Place burritos in refrigerator for a few minutes to cool while cleaning up. Place in freezer 15-20 minutes. Placing directly into freezer may cause the outside of burrito to freeze before inside, you want them to freeze as easily as possible.9. After burritos have become more solid, wrap each one in plastic wrap, place all in large freezer bag. Label bag with name of recipe and date. Burritos should be eaten in 1-2 months.TO HEAT:Remove 1 burrito and heat in microwave for 2 minutes. This may be more or less depending on your microwave.ORThaw burrito and wrap in foil.
