Fry turkey bacon in a small, non-stick skillet. Remove and allow to cool. Spray skillet with non-stick cooking spray and add onions. Cook until golden and tender, about 5 minutes. Mix one egg, two egg white, and a little bit of milk. Move the onions over a bit, respray the pan, and add the eggs. Scramble the eggs and onions together until the eggs are nearly done, then add the spinach and cook until almost wilted.
