1 1/3 cup water
1 tsp extra virgin olive oil
3 cloves garlic, minced
2 roma tomatoes, diced
1 15 oz. can black beans, drained and rinsed
1 lb. nasoya lite firm tofu (no need to press), cubed
3 tbsp nutritional yeast
1 tsp garlic powder
1 tsp onion powder
? tsp turmeric
? tsp cumin
? tsp salt
1 tbsp Dijon mustard
2 Tbsp Penzey's Forward spice blend, or your favorite southwestern spice blend


How Do I Make Zesty Tofu Scramble Breakfast Bowl?

Here is how you make Zesty Tofu Scramble Breakfast Bowl:

Combine water and quinoa and cook according to package directions. While the quinoa cooks, heat the oil in a large pan and add the garlic. Saute garlic for a minute or two, then add tomatoes. Cook tomatoes for a few minutes, until they deepen in color slightly and their liquid begins to form a light sauce. add the beans and combine. Transfer the mixture to a bowl and set aside.Add the tofu to the still-hot pan. Saute, stirring occasionally, under some of the tofu's moisture has cooked off. When the tofu begins to stick to the pan a little, add the spices and the mustard and combine, stirring until well coated. Don't worry about the tofu breaking apart. Add the bean mixture back to the pan. Stir together and cook until heated through. Taste test, and add more southwest seasoning if desired.
