1/4 cup diced onion
4 oz turkey sausage

1/4 tsp (fresh ground) black pepper

Here is how you make Breakfast Skillet:

Makes 3 servings, about 1 cup eachHeat oil over high heat in heavy skillet. Add white and sweet potatoes, saute for 3-4 min. Add the sausage and onions, saute until sausage is cooked all the way through - about 3-4 minutes. Turn heat down to med, add eggplant and seasonings. Saute another 3-4 minutes. Move everything to one side and add the egg. Allow it to cook most of the way through, stirring occasionally to break it up. When almost cooked, mix thoroughly.
