1.5 c. Old-Fashioned Rolled Oats (NOT INSTANT)
0.75 c. Raw Almonds, chopped
0.5 c. Raw Walnuts, chopped
2 T chia seeds
1 t baking powder
1 t salt
0.75 c. Raw/Turbinado sugar
0.25 c. Honey
1 Soft Banana
0.25 c. Walnut Oil (or another mild-tasting oil like vegetable, canola, or coconut)
0.33 c. Peanut Butter or Almond Butter (any kind of nut butter will do!)
2 t vanilla extract
0.33 c. water
1 handful of frozen thawed cherries, chopped (I've used all kinds of varieties - doesn't really affect the taste)


How Do I Make Vegan Breakfast Bars?

Here is how you make Vegan Breakfast Bars:

Preheat oven to 335*. Start toasting the quinoa in a large skillet on low to medium heat, shaking often to ensure even toasting and to prevent burning. While the quinoa is toasting, combine all dry ingredients in a large bowl and mix together. After you've done this, add in the toasted quinoa. In a separate bowl, combine all wet ingredients and mix together. Then, combine wet and dry ingredients. Spread into a pepared 9x13" pan, pressing the dough in somewhat firmly. Sprinkle with oats and press into the dough (otherwise they'll fall off when you eat them). Bake for approximately 28 minutes or until a toothpick comes out clean.Let cool and cut into squares.
