What Are The Ingredients For Vitamin and Protein Packed Vegan Breakfast Scramble Recipe?

The ingredients for Vitamin and Protein Packed Vegan Breakfast Scramble are:

Cheez sauce:
.25 cup flour
.25 cup nutritional yeast
.5 teaspoon garlic powder
1 cups water
.5 teaspoon yellow mustard
1 tablespoons or less of vegan margarine
*Please note that I only use HALF of the Cheez sauce for this recipe. So the nutrition information is based on that amount. This makes about 2 cups of Cheez Sauce and I only use 1 cup for the recipe.

Stir fry:
1/2 onion
1/2 green pepper
(I sometimes use a frozen pepper and onion mix when I don't have fresh ingredients)
1 cup fresh baby spinach
4 oz Gimme Lean Breakfast Sausage
1 tub drained and crumbled Nasoya Plus extra firm tofu (not silken style)

Spices (optional):
I like to use:
turmeric (for color)
Parsley
Garlic salt
Paprika
salt and pepper to taste (though adding salt will obviously change the sodium content of the recipe)


How Do I Make Vitamin and Protein Packed Vegan Breakfast Scramble?

Here is how you make Vitamin and Protein Packed Vegan Breakfast Scramble:

Mix the flour, nutritional yeast, and garlic powder together in sauce pan. Add H2O and mix thoroughly (I usually let it sit for a minute or two before turning the burner on - helps the flour to dissolve). Heat on Med until thick and bubbly, stirring the whole time to prevent clumps. Remove from heat and add mustard and Earth Balance. Set aside.Spray your skillet with PAM or another brand of cooking oil spray (I use this because it adds no calories or fat). Cut the Gimme Lean into small bits and add to the pan. Wait until they are slightly brown, then add the onion and peppers. When they are good and soft, move the mixture to the side of the pan, respray and add your tofu. When it starts to get golden, mix in the peppers, onion, and sausage and keep frying. You can add some turmeric for color, or any of the other spices listed - or you can add your own - the sky is the limit! When it looks like you could eat it, add 1 cup of the sauce and mix it all in to coat until that becomes golden brown too. I saute this for another couple of minutes. It's at this point when I add the salt & pepper to taste - just make sure you add the sodium if you're watching your sodium intake and decide to use it. I think it's essential.This recipe makes 3 1 cup servings and goes well with whole grain toast. If you decide to kick it up a notch, you can even add a russet potato or other vegetables.
