I use Olive Oil spray in fry pan, sautee potatoe, and mushrooms till potatoe is cooked , add eggs, salt pepper and continue cooking till eggs are nearly done to your taste, add scallions and cheese-can also add bacon bits if desired. Remove from heat and put on a warm tortilla wrap, roll up and enjoy! Good for on the move eating.
