The ingredients for Fran's Bran Muffins are:

Preheat oven to 400 -

3 cups of Bran Cereal (Flakes)
1 Cup of boiling water
-Pour water over cereal & stir with a fork a few times to distribute the water
Once this has cooled add:
2 eggs slightly beaten
2 cups buttermilk (regular or low fat)
1/2 cup salad oil (or any substitue for oil you use)
Stir until well blend

In a separate bowl mix the dry ingredients
3/4 cup sugar (or substitute 1/4 c honey & 1/2 cup unsweetened applesauce)
2 1/2 teasp baking soda
2 cups flour (or substitute in some whole wheat flour)
1/2 cup wheat germ or wheat bran
1/2 teasp salt

Add to wet ingredients and mix well.

Add 1 1/2 to 2 cups raisins or other dried fruit

Spray a muffin tin with 'Pam' or use liners. About 1/3 cup for each muffin.

Bake 400 degrees for about 15 to 20 minutes. Let cool on rack. Store in fridge or freeze.
