Spray non stick pan, heat med/high. Pour Egg whites or egg beaters into pan. When you can no longer see the bottom of the pan (eggs are not quite firm) add spinach, tomato, mushrooms and cheese to the center of the egg. cook 1-2 minutes, fold egg side to the center and transfer to plate.
