This is a slightly healthier version of a Rachael Ray recipe I saw on television. Instead of using 6 whole eggs, I used 3 and substituted egg whites for the rest. I also omitted a cup of cheese that was included in the original recipe.

Here is how you make Turkey Sausage Cups:

Makes 3 servings (2 cups each)Preheat oven to 400 degrees.Melt 1 tbsp. of butter or margarine (I used Smart Balance buttery spread) and pour into the bottoms of a cupcake tin (for 6)cut small slits in four corners of each slice of bread. Fold into cups and put into cupcake tin.combine eggs, egg whites, and crumbled turkey sausage. Add salt and pepper to taste if you like. Whisk well until all ingredients are blended.Spoon the egg & sausage mixture evenly into the 6 bread "cups" in the cupcake tin.
